Do any of you have experience with any of the paristatlic pumps with multiple heads?

Cheaper is better if they are able to accurately exchange water and maintain salinity.

    Fish-street NT-01 $140.00 (3 pumps)

    Marine Magic $180.00 (3 pumps)

    Bubble Magus $300.00 (3 pumps)

    LiterMeter 3 $360 + $180 for extra pump (2 pumps)

Is there anything else I should be looking at?

Only one I have looked into very much is the litermeter. You actually calibrate the pumps so they remove and replace consistent amounts of water. Its a top notch piece of equipment, and everyone that has them swears by them.
I don't think with this type of equipment you will want to go cheap. The cheap stuff usually works fine at first, but usually not for long. I just had to replace a cheap dosing pump I use for ATO. only lasted a year and luckily they were nice enough to warranty it for me.

For auto water changes I would go with the litermeter 3, or check out the genesis reef system.

I don't have room for the genessis metering resevoirs so that's out. I'm not sure I'm ready to pony up over $500 for the litermeter setup at this time. Anyone try a simple dual-head single motor setup like a cole palmer? It should be easy to have my apex run it once or twice a day for the time required to change the amount of water I want.

if you can get a good cole parmer pump I think your plan will work just fine. You just want to be sure both pumps are moving the exact same amount of water so that over time you won't end up moving different amounts of water.
