Does anyone in the club cook use a smoker?

    To start I get my coals going in my chimney, then I dump each half on each side of the grill and put unlit coals on top of those.  It does use quite a bit of coals but if you shut your grill done when your done you can reuse them again for the next BBQ.
    I also use a thermometer with an external probe and close my bottom vent when the heat is too high or the coals are burning up to fast.  If I notice the temp drop too low I open it again for a bit to get the coals going again.
    I also use Kingsford Mesquite coals, they seem to burn a lot longer and don't burn up right away like the regular ones do.  The added mequite flavor is also a bonus.
    Oh yeah, today I was backing up my trailer and totally forgot about my grill being moved....now my grill has a few dings.  GRRRRR!

    My buddy uses a couple coals to get things going and then just uses 2-3" diameter logs of hickory, it gives GREAT flavor.

    I smoke a bunch Sone. Someone mentioned Pork Loin, you will feel like a Chef God if you smoke Pork Loin for a party. It is easy and comes out unbelievable, people go away saying they have never tasted anything like it. And HyVee has it for $1 a pound right now I hear. I fed a party of 30 last weekend for $15 in pork.
    I also smoke about anything else, Beef, Chicken and am planning on getting into Salmon. Whole chicken smoked for about 2 hours are my favorite way to eat chicken and cheap. One tip I have, get a wireless thermometer. Very awesome, watch the temp from the couch. I must admit Charcoal was too much work for me so this year I got a Smokey Mountain Propane smoker hooks into my main 1000 gallon tank. I can set the temp at 175-225 and it holds where I set it. Use the wireless and pull it off at exactly the right time. For the pork loin about 145, but I really like to pull it a few degrees cooler and let it sit for about 15 minutes.

    Man, I want one of those!  I'm smokin' some monster spare rib racks right now and need to check every 20 minutes or more.  Being able to see it from the couch would be sweeet!

    No doubt, it would've came in handy today since I overcooked the chicken and it was slightly dry. All it all, it turned out great!

    I like it, things turned out good considering it was my first time smoking and using the egg. Overall, I would give it a 6 out of 10. I know I could have done things better and I know what they are so I hope next time will be even better!

    They work pretty well!  What amazes me the most is the low consumption of coal. I barely put any in the pit and it burned for 6 hours without having to refuel.

    Gered, those ribs look awesome! What kind of rub do you use on it, is it commercial or homemade?

    we had basball games all day yesterday so I threw mine in the oven at 2 & came home at 8 to the best ribs I have had in years.

    I got the fareway substitutes (thanks fawn)

    I used quite the assortment of stuff for the ribs. I like spicey stuff so I got this kicked up a notch. I put a little liquid smoke on them to make the stuff stick better and then I used chili powder, creole seasoning, garlic, pepper, and then my mom mixed some stuff in a container so I put a little of that on it. I was hoping to cook these on my new smoker/grill but something went wrong in manufacturing and the the smoke box holes arent lining up right. I am thinking we need to have a state wide meeting and smoke a bunch of food!

    Oh and instead of water I used some Bud wheat and for wood chips I used mesquite and little apple wood.

    It's nice to deviate from a standard recipe once in awhile. Nice job on the ribs, they look so good!

    Did they price match for you?  I called the one here in E-dale and said they wouldn't because they don't sell Hormel!

    Yes they did, llimit 1 rack though.

    I did get a rain check from Hy Vee for 4 more so I am anxious to see the taste difference

    Yeah, has to be the same item, same size, brand, etc. for them (Fareway) to price match.  I like to get the rain checks if I can because then you can go back and shop when its not so crazy and they have plenty of whatever.........
